Ingredients

1 kg tomatoes, diced |
4cm piece ginger, diced |
|
250g dark brown soft sugar |
4 cloves of garlic, diced |
|
500g red onions, chopped |
150 ml red wine vinegar |
|
½ tspn paprika |
¼ tspn crushed chillies (optional) |

Method
|
| Mix all ingredients together in a large pan, bring to the boil then simmer, stirring occasionally, until chutney is ready, This will take 2-3 hours depending on how juicy your tomatoes and onions are. The chutney is ready when the surface is glossy and the mixture parts when a spoon is drawn through. It can then be bottled in sterilised jars and will keep for up to a year. Makes a very intensely flavoured chutney.
